"Not sure what I'm doing."

As I peered into my freezer and cabinets I said to my boyfriend, "Not sure what I'm doing."

I knew my mother had put vegetables in the oven before, so I went with that concept. 

I put some Pompeian Extra Virgin Olive Oil on a baking sheet, dumped frozen Bird's Eye veggies on it and scooted everything around a bit. Little S&P and they were good to go.

400* for about 12 minutes.. all those number were a guess, and it turned out alright. 

I tossed the sauce that came in the veggie bag, figured it wasn't the best thing to ingest. 

I also made some Earthly Choice Quinoa. Boil water, simmer down, cover. It's so easy, even I can do it. 


You know what to do with that olive oil.. Drizzle, drizzle, drizzle

Quinoa portions are easy. 2 cups liquid per 1 cup of dry. 

Sprinkle, sprinkle little seasonings.


Bake, bake, bake. Bake your veggies.


I then mixed the quinoa and veggies, splashed it with lime juice and chowed down. 

Hooray for me, I cooked. Sorta.
