"Not sure what I'm doing."

As I peered into my freezer and cabinets I said to my boyfriend, "Not sure what I'm doing."

I knew my mother had put vegetables in the oven before, so I went with that concept. 

I put some Pompeian Extra Virgin Olive Oil on a baking sheet, dumped frozen Bird's Eye veggies on it and scooted everything around a bit. Little S&P and they were good to go.

400* for about 12 minutes.. all those number were a guess, and it turned out alright. 

I tossed the sauce that came in the veggie bag, figured it wasn't the best thing to ingest. 

I also made some Earthly Choice Quinoa. Boil water, simmer down, cover. It's so easy, even I can do it. 


You know what to do with that olive oil.. Drizzle, drizzle, drizzle

Quinoa portions are easy. 2 cups liquid per 1 cup of dry. 

Sprinkle, sprinkle little seasonings.


Bake, bake, bake. Bake your veggies.


I then mixed the quinoa and veggies, splashed it with lime juice and chowed down. 

Hooray for me, I cooked. Sorta.

Where there's a will, there's a Subway.

Subway is my best friend. 

Tons of veggies, options of dairy-free bread, and specifically jalapenos. I love me some jalapenos. 
Seriously, get used to that word because it will be used a lot. 

Here is my go-to sammich. 

Italian bread, toasted with tomatoes and onions on it. 
Add any and every veggie you want. Ask for extra. It's all you eat, eat enough. 
Sometimes I add the yummy in my tummy Sweet Onion Sauce, however oil and vinegar with S&P works too. Less sugar that way, I'm sweet enough.

If chips are too hard to resist go with plain Baked Lays or Jalapeno Kettle chips. 

Water. No other options. 


Here is my lunch from 9-29. 

Delicious and nutritious. I teach multiple fitness classes on Mondays so I don't feel bad about eating the bread.

I'm the worst vegan ever.

Hello, my name is Jillian and I am a terrible, lazy, no-good vegan.

I eat out ninety-nine percent of the time, or buy things that are extremely easy to prepare. Beans straight from the can is my specialty.

I thought writing a vegan blog meant I had to invent homemade tahini lime coconut oil curry peanut ginger hummus... However, if I had done that, I would still be sitting in my kitchen, staring at a mess of ingredients that I blindly pulled from a shelf at Kroger.

I don't enjoy cooking, so I don't.

I survive in Johnson City, being a terrible, lazy, no-good vegan.
